I note that we do not need a visa for Vietnam if visits less than 15 days and we do not re-enter country for 30 days.
On your solo Vietnam and Cambodia trip, we leave Vietnam go to Cambodia but then return back to Saigon for return flight home. Do we just transit thro Saigon airport and hence its not a re-entry back into Vietnam (and so a visa is not needed)?

Your assumption is absolutely correct: on the return flight via Saigon you are in transit and therefore not considered to be re-entering Vietnam and therefore do not require a visa. And just to reassure you even further we have run this tour many times and not had any troubles whatsoever regarding visas.
